Vegan Savoury Tomato & Chai Seed chutney

Ingredients
  • 200g Cherry tomatoes
  • 50g Brown sugar
  • 1 Roughly chopped onion
  • 2 Tablespoons chai seeds(this will give it a thick texture)
  • 1 Teaspoon cayenne pepper
  • 1 Teaspoon of cinnamon
  • ½ Tablespoon mustard powder
  • 4 Tablespoons soya sauce
  • Olive oil
  • Water
  • Black Pepper
Instructions
  1. Pour a small amount olive oil into the bottom of a heavy based pan
  2. Add the cinnamon, cayenne pepper and mustard powder.
  3. Gently brown the spices to activate the full flavour – Be careful not to burn
  4. Add the chopped onion, fry on a low heat until soft.
  5. Chop the tomatoes and add them to the mix.
  6. Heat until they have broken down but still have some shape.
  7. Add the brown sugar, soya sauce and just enough water to barely cover the tomatoes.
  8. Heat further and mix through.
  9. Add the Chai seeds, mix in and bring to the boil.
  10. Depending on the consistency add a little more water if too thick
  11. If too watery, reduce further.
  12. Remove from the heat and allow to cool.
  13. Serve with simple crackers and a selection of cheese.
